GRAPE
They were vinified in our Quinta das Marvalhas winery, in Almendra, in the heart of the Douro Superior. We selected grapes from the varieties Tinta Francisca, Tinta Roriz, Touriga Franca and Touriga Nacional, produced on our farms. We used the four grape varieties, trying to combine the round tannins of Tinta Francisca with the firm ones of Tinta Roriz, the notes of cistus and soft tannins from Touriga Franca, and the aromas of black and wild fruits, with very marked floral and fresh notes from Touriga national.
VINIFICATION
In our cellar, with the most modern technology and total temperature control, we eliminated bunches that are not in perfect condition, total destemming, soft crushing and thermal shock, followed by a period of pre-mashing. - cold fermentation in a mill for about 12 to 24 hours, after which the masses were transferred to large and low fermentation vats, maceration for 8 days at 22 ºC.
TEST RESULTS
On the nose, very fresh and intense with notes of black wild fruits and black cherries in balance with seductive “Liquorice” nuances, the aroma being complexed by the notes of wood. In the mouth it is very concentrated, warm, with firm tannins and smooth texture, very intense and persistent finish showing the strength of the Douro Superior wines with strength. This wine accompanies meats, cheeses and Mediterranean cuisine in general. Serve between 15 and 16ºC.
