ORIGIN
The production area of CARM olive oils is located in the heart of the Alto Douro, in the Upper Douro, the cradle of the best "A" grade vineyards for Port wine, where Roman signs of this cultivation have existed since the 2nd century BC, followed by the Arabs between the 7th and 11th centuries. It is in this area, more specifically around the village of Almendra where CARM has its olive groves, that one of the areas of Portugal with the greatest natural aptitudes for excellent olive growing is located, thanks to the nature of the very poor schist soils, the exposure of the olive groves and the dry climate, characterized by notable temperature differences between summer and winter. The olive groves are located at altitudes between 150 and 450 meters above sea level. For CARM Praemium olive oil, we select the best olives of the Madural, Negrinha and Verdeal varieties on our farms.
ORGANIC AGRICULTURE WITH PROTECTED DESIGNATION OF ORIGIN - PDO
CARM was one of the pioneers of organic olive growing in Portugal, certified by Sativa, complying with the USDA PDO.
All farms with traditional olive groves that produce the olives are within the PDO of Trás-os-Montes and Alto Douro.
The olive harvest is done manually in olive groves with steep slopes and by mechanical vibration in the others, with the harvest taking place between the beginning of November and mid-December.
The extraction is done cold in a continuous process – traditional stone mill and/or two-stage ecological decanter.
