Quinta do Couquinho Olive Oil is a PDO (Protected Designation of Origin) product, natural, originating from olives grown using integrated production methods, resulting from olive groves planted over many centuries in the Terra Quente Transmontana region.


Climate and soil:

Mediterranean and Schist Soil.


Olive Varieties:

Portuguese varieties - Verdeal, Redondal, Cobrançosa and Cordovil

Harvest:


The harvest begins as soon as the organoleptic characteristics of the olives indicate the full aromatic potential of the year. With the main focus on harvesting and processing the olives in the shortest possible time, care is also taken to complete the harvest before the arrival of frosts, characteristic of the Transmontano winter, which can deteriorate the quality of the olive oil. Since no olives that have fallen to the ground before the start of the harvest are used, the harvest is carried out mechanically in the most remote locations with aerators/back-mounted vibrators, and in the more accessible olive groves with mechanical harvesting using a tractor and "fruit catcher" tarp, techniques that preserve the structure of the tree and do not damage the olive. Daily transport to the mill is done in small 300kg pallets. The maintenance of the olive grove is carefully managed, always taking care to preserve the ecology of the tree and the ecosystem, always from a perspective of respect for the land.


Processing:


The olives are processed in an Ecological Mill with cold extraction at temperatures always below 20°C. Without the addition of water or preservatives, the entire process is developed in such a way as to preserve the spiciness as well as the sweetness on the palate, allowing the organoleptic characteristics that centuries-old olive groves confer on the olive to remain intact.

This olive oil is subsequently subjected to natural decantation in hermetically sealed stainless steel tanks at a constant temperature.


Tasting and gastronomy notes:


Green fruit color with golden reflections, shades that come from the varieties used. With a ripe fruity aroma, tomato vine and ripe tomato, on the palate it presents a beautiful balance of bitter and sweet, dried fruits such as walnuts and almonds, the finish is spicy and harmonious. Ideal to accompany salads and toasts as well as grilled and sautéed vegetables.
