ORIGIN
The CARM olive oil production area is located in the heart of the Alto Douro - the Upper Douro - considered the cradle of the best "A" grade Port wine vineyards. Here we can still find traces of Roman culture dating back to the 2nd century BC, as well as traces left by the Arabs between the 7th and 11th centuries. CARM's olive groves are located in the heart of this area, around the village of Almendra. This is one of the areas in Portugal with the best natural characteristics for the production of olive oil with high quality standards, resulting from the uniqueness of the very poor schist soils, the exposure of the olive groves and a dry climate with extreme temperatures between summer and winter.
The olive groves are between 150 and 450 meters above sea level. For the production of CARM "Grande Escolha" olive oil, we select the best varieties of Madural, Negrinha and Verdeal olives from our farms.
CARM was one of the pioneers of organic olive growing in Portugal, certified by Sativa, complying with USDA NOP.
All farms with traditional olive groves that produce the olives are within the Trás-os-Montes and Alto Douro PDO.
The olive harvest is done manually in olive groves with steep slopes and by mechanical vibration in the others, with the harvest taking place between the beginning and middle of November.
The extraction is done continuously using a cold process – traditional stone mill and/or two-stage ecological decanter.
